Hey Ya'll, it's my very first recipe post!
I've been doing recipe round ups over the past several months because I love to share awesome food with my friends and readers. I've actually wanted to do my own recipes on this blog from the very beginning but something always blocked me. Well, I went for it and I'm so glad I did. It was sooo much fun.
I even got my son involved, he was a great helper in the kitchen and in the photo lab (aka the playroom with the window open while he held up the foam board). I've got a while to go before I learn all the ropes but I'm looking forward to sharing a lot more delicious plant based recipes with you guys.
This no bake recipe was so easy and fun to make. Seriously, if you have little kids around who are always asking to cook with you, this kind of recipe is perfect. Why? Because there's no actual cooking involved. It's all about blending, chopping and squishing. And we know how much kids like to do all of that.
Make sure you soak your nuts and seeds for the topping at least two hours ahead of time. Soaking your nuts helps make them easier for your stomach to digest and it also helps make them blend more smooth.
The secret ingredient to making the chocolate hazelnut topping is the soaked chia seeds. It's like adding an egg or gelatin. You'll see when you make the recipe how much the seeds soak in the water and plump up. The healthy fats in the seeds blend with the other ingredients and help it set really well. Plus they're such a healthy addition because they have so many health benefits.
Make sure you store them in the fridge or freezer until you are ready to eat because the topping will begin to melt quickly in room temperature.
