The holidays can be the hardest for vegans and vegetarians, particularly those of us who are still in transition. We get invited to parties and go to family gatherings, and the tables are always filled with heaps of unhealthy temptation that we usually feel guilty about eating later. In past years I have succumbed many times to the pressure. In fact it was after Thanksgiving dinner in 2012 when I finally made the complete switch to vegetarian and said I'm officially done with meat. Since then I have struggled with going the extra mile toward veganism. Sometimes I have done really well, and other times not so much.
Last week my five year old son said, "Mommy, did you know we can't celebrate Thanksgiving because we have to eat a Turkey." That stung a little. The kids in his Tae Kwon Do class were obviously talking about their holiday plans and I hate it when my little man is made to feel left out and confused. Our family is currently transitioning again to a plant based diet, and I really want to show myself, and more importantly my son, just how delicious a vegan Thanksgiving can really be.
